Crayfish cocktail with dill & Caper mayonnaise

1.50kgCrayfish, fresh (Langouste)
  Dill Mayo
30.00gCapers in can, extra fine finely chopped
5.00mlKNORR Lemon Juice 6 x 2L
25.00mlMEADOWLAND Classique 10 x 1L 
125.00mlHELLMANN'S Real Mayonnaise 4 x 2.5kg 
10.00mlDill, fresh chopped
1.00mlLemon zest finely grated
  5 ml creamed horseradish
  lettuce , 4 leaves

Preparation

1.Gently remove meat from crayfish tails and reserve shells.
2.Mix together all ingredients for dill mayonnaise.
3.Cube crayfish meat and mix with mayonnaise.
4.Place a lettuce leaf into each martini glass, arrange crayfish shell on top of lettuce, and add crayfish cocktail to shell.
5.Garnish with a sprig of dill and serve.
