Crayfish cocktail with dill & Caper mayonnaise

| 30.00 | g | Capers in can, extra fine finely chopped |
| 5.00 | ml | KNORR Lemon Juice 6 x 2L |
| 25.00 | ml | MEADOWLAND Classique 10 x 1L |
| 125.00 | ml | HELLMANN'S Real Mayonnaise 4 x 2.5kg |
| 10.00 | ml | Dill, fresh chopped |
| 1.00 | ml | Lemon zest finely grated |
| 5 ml creamed horseradish | ||
| lettuce , 4 leaves |
Preparation
1.Gently remove meat from crayfish tails and reserve shells.
2.Mix together all ingredients for dill mayonnaise.
3.Cube crayfish meat and mix with mayonnaise.
4.Place a lettuce leaf into each martini glass, arrange crayfish shell on top of lettuce, and add crayfish cocktail to shell.
5.Garnish with a sprig of dill and serve.
