Cucumber, Broccoli and Carrot Salad with Cheesy Chive Dressing

25.00mlMilk, fresh
20.00gChives

Preparation

1. Remove endsfrom the cucumber and cut lengthways into quarters.
2. Discard seeds and cut each quater into 5 cm lengths.
3. Using a potato peeler, peel strips lengthways from each piece.
4. Cut the carrots into 5cm lengths, peel strips from each length, place in cold water until curled and drain.
5. Cut broccoli into florets, blanch in boiling water ad refresh.
6. Combine vegetables in a bowl and serve with dressing.
7. For dressing, mix chives, milk and cheesy dressing together.
