Cream of Mushroom and Port Soup with Chive Cream

  Robertsons Atlantic Sea Salt and Black Pepper to taste

Preparation

1. Fry the finely chopped onions in the Marvello until soft.
2. Add the sliced mushrooms and Robertsons italian herbs.
3. Simmer for 5 minutes.
4. Add 2.5lt water and port and bring to the boil.
5. Make a slurry with the Knorr mushroom soup and 300ml of the water.
6. Add to the soup and simmer for 10 minutes.
7. For the chives cream, Whisk the Meadowland until stiff, finely chop the chives and mix with the Meadowland. Serve a dollap on top each bowl of soup.
