Cracked Spicy Potato Tapas

5.00gROBERTSONS Paprika 6 x 700g 
850.00gKNORR Tomato Pronto 6 x 2kg 
15.00gSugar, Brown
40.00gParsley, fresh
  Robertsons Atlantic Sea Salt and Black Pepper to taste

Preparation

1. Place potatoes in a tea towel and hit with arooling pin or meat mallet to crack them lightly.
2. Flatten garlic in the same way or with the back of a knife.
3. Heat the oil in a large heavy based pan ad cook the onion, potatoes and garlic for 10-12 minutes, stirring until golden.
4. Add the spices and chilli flakes, tomatoes, brown sugar and some salt and pepper.
5. Cover and simmer for 15 minutes until the potatoes are tender.
6. Stir through the parsley and serve warm.
