Cajun Blackened Fish

| 1.00 | pc | MARVELLO Full Fat Margerine |
| 1.00 | pc | Red Onion (Use half and dice finely) |
| 2.00 | g | Salt (a pinch) |
| 1.00 | pc | Lime (juice of 1 lime with zest) |
| 15.00 | ml | Coriander, fresh (Cilantro) 3 tsp |
| 1.00 | pc | Red chilli seeded and chopped |
| 1.00 | pc | Paw-Paw |
| 200.00 | g | Cajun Spice Blend |
Preparation
1. Prepare the Paw-Paw Salsa by peeling, deseeding and finely dicing the paw-paw.
2. Add chilli, onion, coriander, lime zest and juice and salt.
3. Mix well and set aside.
4. Pre-heat frying pan over medium heat.
5. Place Cajun Spice in a flat tray.
6. Brush fish fillets with melted MARVELLO and dip into Cajun Spice until well-coated.
7. Place fillets into the hot pan and cook for about 2 minutes on either side until blackened.
8. Garnish with salsa and serve immediately.
