250.00mlKNORR Demi-Glace 3 x 800g (made up) 
20.00mlOlive oil
50.00gMushrooms (sliced)
5.00mlTarragon, fresh
15.00mlTomato concasse
5.00mlVinegar, red wine
10.00mlParsley, fresh (chopped)
120.00gPotatoes (mashed)
100.00gMixed seasonal vegetables (grilled)

Preparation

1. Seal chicken breast in oil.
2. Place in oven and cook at 200°C for 6 minutes.
3. Make up 250ml KNORR Demi Glace, add red wine vinegar, add mushrooms and cook for 2 minutes.
4. Finish sauce with tarragon, tomato and parsley.
5. Serve with mashed potato and seasonal vegatables.
