Mango and Brandy Layer Cake

Preparation
1. for the cake: Beat eggs until thick and creamy.
2. Gradually add sugar, beat until dissloved betwee additions.
3. Fold in the flour and baking powder.
4. Spread mixture into greased cake tin and bake at 180`c for 30 minutes.
5. Cool and cut into 3 layers.
6. Brush each layer with brandy.
7. For filling: Make up the tiramisu mix as per instruction on pack.
8. For syrup; Combine mangos, sugar and water in a saucepan, stir util dissolved without boiling, bring to the boil, reduce heat and simmer for 5 minutes. Stir in brandy.
9. Flod tiramisu and syrup together.
10. Sandwich layers with filling, keeping enough of filling aside to decorate the cake in.
11. Decorate with mango pieces and nutmeg.
