Chocolate mousse quennelles and waffle wedges

1.00lMilk, fresh
1.00kgCARTE D'OR Multipurpose Pancake Mix 6 x 1kg
1,750.00mlWater (cold)
5.00gBaking soda, bicarbonate

Preparation

1. Pour cold milk and the chocolate mousse powder in a deep mixing bowl and mix with an electric beater for 3 minutes on low speed and on high speed for 4 minutes.

2.Place in the fridge for 1 hour to set before serving. When ready to serve use dessert spoons to form quenelles.

Waffles

1. Whisk together 1 container of powder and 3 teaspoons (5g) of bicarbonate of soda with 1625ml water until consistency is obtained.

2. Into a hot well-greased waffle iron, ladle enough mixture to cover the grid. Leave in waffle iron for 4-6 minutes or until suitably browned. Cut waffles into quarters, and half dip into melted chocolate.

3. Place between chocolate mousse quennells. Garnish & serve
