People can get a little cray-cray when the subject of MSG comes up. It's assumed the role of ultimate food boogeyman, even though it occurs naturally in foods like mushrooms, tomatoes and grapes. We can hear the gasps of disbelief from here, but it's a true story!
Point is, today, diners want food that is as “pure” and “natural” as possible. Which is why we've introduced our new spice range. Boom, boom, shake the room.
Yep, on 1st August 2018, Robertsons launched their new spice range; which is totes free from GMOs, colourants and preservatives. This spice range is now Steam-sterilised (instead of radiated) and has no added MSG.
But what's the deal with MSG? We thought we'd tell you. (You can totally pass this knowledge off as your own and impress the pants off your diners!)
WHAT IS MSG?
Simply, MSG is a flavour enhancer that provides an umami flavour to intensify the savoury and meaty flavour of foods.
Scientifically, MSG is the sodium salt of the common amino acid, glutamic acid and occurs naturally in our bodies and in many types of food, including mushrooms, tomatoes, grapes and cheeses. Yep – it's a natural substance!
It's been safely used for more than a hundred years to balance flavour in savoury dishes, and can even reduce the salt content of a dish – helping people to lower their salt content without compromising on taste.
Even so, lots of people think monosodium glutamate (MSG) is harmful, and would prefer not to consume it.
WHAT ABOUT COMMERCIALLY PRODUCED MSG, WE HEAR YOU ASK?
In 1908, a Japanese professor extracted glutamate from a seaweed broth and determined that it was responsible for the savoury taste of the broth. Professor Kikunae Ikeda patented his discovery, and commercial production started the following year.
HOW IS IT MADE?
MSG is made by fermenting starch, sugar beets, sugar cane and molasses; a process similar to the fermentation process of yogurt, vinegar and wine.
SO, IS IT SAFE TO EAT?
The short answer is yes. The US Food and Drug Administration considers the addition of MSG to foods to be “generally recognised as safe”.
Many people believe themselves to be sensitive to MSG, however, in studies where these individuals are given MSG or placebos, scientists have not been able to consistently trigger reactions. Simply put – scientists are unable to confirm a link between eating MSG and reported side effects (headaches and nausea).
NO ADDED MSG IN OUR SPICES
Although MSG occurs naturally in food, we get that some people feel uncomfortable with the commercially produced version. And people should be able to choose what they put into their bodies, which is why we have not added any of it to our new spice formulation.
