Preparation
1. Roast peppercorns, cumin and mustard seeds on medium heat to release flavours
2. Grind spices to a powder and add paprika, cayenne, oreganum, thyme and salt. Grind again
Use as seasonings for fish steaks, chicken and meat dishes and in jambalaya and gumbos.
Also ideal as a crust on lamb cutlets, beef medallions, fish fillets and as a base for spicy casseroles and stews
