Preparation
1.Chop up or crush up the two bay leaves in a pestle and mortar.
2.Add the remaining spices and mix together until well combined.
Chef tip: Dry fry the spices to allow essential oils of the spices to extract.
This blend can be added to a curry, used as a dry Rub or a good base to add Star anise, cumin, coriander, fennel etc.
