Preparation
1.Chop up or crush up the two bay leaves in a pestle and mortar.
2.Add the remaining spices and mix together until well combined.
3.Chef tip: Dry fry the spices to allow essential oils of the spices to extract.
4.This blend can be added to Stir Fries and milder curries and complements vegetarian dishes as well.
