Preparation
1. Place the vegetables in a roasting tray, add sea salt and oil and toss throughly.
2. Roast in a hot oven at 180 degrees for 25 minutes, till fluffy and cooked
3. While still hot add the chutney, mayo and sweet chilli sauce, coriander and juice of half an orange
4. Mix thoroughly and allow to cool
