Banana And Cinnamon Muffins

 
 
 

Ingredients (12 servings)

2.50mlROBERTSONS Cinnamon 6 x 600g 
  Salt pinch
5.00mlBaking soda, bicarbonate
5.00mlBaking powder
375.00gFlour, white
80.00gMARVELLO Full Fat Margerine
1.00pcEggs, large (class A)
200.00mlCastor sugar
4.00pcBananas fully riped, mashed

Preparation

Combine bananas, sugar and eggs.
Add in melted Marvello Full Fat Margarine.
In a separate bowl sift remaining ingredients.
Add banana mixture to flour and mix lightly until just combined.
Spoon into greased muffin pans
Sprinkle a little brown sugar and a pinch of Robertson’s Cinnamon on each muffin.
Bake at 180ºC for about 15- 20 minutes
Leave to cool for 5 minutes, then remove to cooling rack.
Option to add chopped pecan nuts.
