Lamb Shanks in a Mediterranean Sauce

Preparation
1. Trim off excess fat from the shanksand sinew.
2.Combine flour, salt and pepper in a bag and coat the shanks.
3. Heat half the oil in the pan and brown the shanks.
4. Place in casserole dish.
5. Wipe out the pan, heat the remianing oil and fry the onion and garlic.
6. Add the tomatoes, sugar, tomato paste and wine and cook for 2 minutes.
7. Add the thyme, parsley and basil and pour over the shanks.
8. Cover and bake at 160`c for 3 hours.
