Chicken Fajitas

 
 
 

Ingredients (4 servings)

  500g Chicken Breast fillets thinly sliced or cut into strips
3.00gROBERTSONS Chicken Spice 6 x 1kg 
3.00mlROBERTSONS Cajun Seasoning 6 x 1kg 
10.00mlOlive oil
40.00mlDry White Wine
  Salt and Pepper to taste
  4 Sprigs fresh thyme
30.00mlMARVELLO Full Fat Margerine
250.00gButton mushrooms, sliced
15.00mlGarlic, crushed
50.00gRed Onion thinly sliced
  3 large red peppers variation of green and yellow peppers may be thinly sliced and used
400.00gTortillas, maize flour
200.00gTomatoes or 4 in number
30.00mlCoriander, fresh (Cilantro) chopped
10.00mlLemon juice, fresh pressed
  100g Red onion chopped
  Salt & Pepper to taste
60.00gHELLMANN'S Light Mayonnaise 4 x 1.5kg
  250 g lettuce shredded

Preparation

1.Season chicken breast with cajun seasoning and chicken spice, olive oil, salt & pepper, fresh thyme, half the wine and allow to rest for 20 mins.
2.Heat butter in a medium sauce pan, sauté sliced
mushrooms and cook for 2 mins, add wine, crushed garlic, sliced peppers, red onion and cook for 2 min.
season with salt & pepper to taste & set aside.
3.In a dry pan place marinated chicken and cook over medium heat, add the rest of the wine and cook for 10 mins. Remove from heat.
Warm wraps in microwave for 15 secs
4.In a bowl combine all salsa ingredient and mix.
6. Spread Hellmans and add chicken filling to the center of tortilla, top with salsa and shredded lettuce and serve.

Salsa:
Chopped tomatoes
Chopped coriander
Lemon juice
Red onion
Robertson Salt & pepper to taste

Spread:
Hellmann’s light mayonnaise
Lettuce, shredded
