Rich Chocolate Meringue Mousse Cake served with Mixed Berry Coulis

200.00mlMilk
250.00mlMEADOWLAND Classique 10 x 1L

25.00gHazelnuts , toasted and crushed
100.00mlCARTE D’OR Wild Berry Sauce 
100.00gMixed berries, frozen
  Mint leaves , for garnish
  Icing sugar, for dusting

Preparation

1. Beat up egg whites until firm peaks form.
2. spoon in cocoa powder, add sugar gradually until firm.
3. Pipe 12 meringue disks onto greased paper.
4. Piipe cigars for decoration on top of dessert.
5. Bake in oven at 120C for about 4 hours, until dried out.
6. Melt the chocolate, pipe lace as required.
7. Make up chocolate mousse as per instructions on container, add brandy and Meadowland.
8. Assemble meringue, mousse cake, sere with frozen berries and wild berry sauce.
9. Dust meringue with icing sugar and garnish with mint.
