  • Oil 50.0 ml
  • Butternut soup mix (Chopped) 1.6 kg
  • Orange zest 5.0 g
  • Orange juice 250.0 ml
  • Cinnamon (ground) 5.0 g

    • Heat the oil in a pot and add the, butternut mix, orange zest, orange juice and cinnamon and fry for 2 min stirring occasionally to prevent the mixture from sticking to the bottom of the pot.
  2. Step 2

    • Mix the cold water and Knorr Professional Thick Vegetable Soup, add to the butternut soup mixture, and bring to the boil. Allow to simmer for 30 - 40 min. Remove from the heat and blend/liquidise until smooth. Return to the heat and stir through the cream, allow to simmer for 5 min.
  3. Step 3

    • Remove from the heat, portion and serve.
  4. Chefs Tip

    • Remove the orange juice and orange zest and replace with 1 g of nutmeg.
