  • Sweet potato 500.0 g
  • Roast vegetable mix 800.0 g
  • Baby tomatoes 200.0 g

Step 2

  1. Step 1

    • Peel the sweet potato and cut into even, bite-sized pieces. 
    • Pre-heat oven to 160 °C. In a large mixing bowl, mix together the sweet potato, roast vegetables and tomatoes. 
  2. Step 2

    • Grate the cheese.
    • Combine the remaining ingredients together in a separate mixing bowl and pour the mixture over the vegetables. Mix well until everything is coated.                                       
  3. Step 3

    • Pour the veggie mixture into a roasting dish and roast for 40 min. 
  4. Chef's Tip:

    • Add bacon to the mix for a smoky flavour or even replace the tomatoes with mushrooms.
