  • Olive oil 15 ml
  • Fresh lemon juice 20 ml

Ostrich:

  • Ostrichsteaks 250 g

Preparation

  1. Rub:

    • Combine all ingredients together except ostrich to make a rub.
  2. Ostrich:

    • Rub on the steak and grill until medium rare.
  3. Chefs Tip:

    • Using tongs, not a fork, to prevent loss of meat juices. Once the meat is sealed, sprinkle with seasoning.
    • Cooking time: (depending on thickness of the ostrich cut)
      • Rare : 2 minutes per side
      • Medium rare : 3 minutes per side
      • Medium : 4 minutes per side
      • Overcooking will result in a rubbery texture.
    • As an alternative, use chicken breasts or line fish.
