Grilled Ostrich with Citrus & Herbs
Healthy, lean ostrich is one of South Africa's greatest food exports and is a local jewel on our menus, providing diners with a healthy red meat choice.
Rub:+/- 8 minutes
- Combine all ingredients together except ostrich to make a rub.
- Rub on the steak and grill until medium rare.
- Using tongs, not a fork, to prevent loss of meat juices. Once the meat is sealed, sprinkle with seasoning.
- Cooking time: (depending on thickness of the ostrich cut)
- Rare : 2 minutes per side
- Medium rare : 3 minutes per side
- Medium : 4 minutes per side
- Overcooking will result in a rubbery texture.
- As an alternative, use chicken breasts or line fish.
