Preparation

  1. Step 1

    • In a pot, combine the Knorr Professional Chicken Stock Granules and water, mix well and bring to the boil. Add the chicken leg quarters and cook for approximately 15 min.
  2. Step 2

    • Remove the chicken and loosen the skin from breast by inserting fingers, gently pushing between skin and meat.
  3. Step 3

    • For the Chipotle Rub: Combine the ingredients together. Rub under the loosened chicken skin on the chicken quarter.
  4. Step 4

    • Coat the grill rack with cooking spray and place chicken underneath. Grill for 5 min on each side or until chicken is golden brown.
  5. Step 5

    • For the White Barbeque Sauce: Combine all the ingredients together and mix well. Serve with the grilled chicken quarter.
