Ostrich Patty:

To Make the Red Onion Marmalade:

  • Oil, Sunflower 40 ml
  • Onions, red(sliced) 250 g
  • Red chilli(chopped) 1 pc

  • Sugar 250 g
  • Wine, red 125 ml

To Assemble the Burger:

  • Salad pack (lettuce)Oak Leaves 60 g

  • Nuts, Pistacchiodry (roasted and roughly chopped) 40 g


  1. Ostrich Patty:

    • In a bowl, mix together the ostrich mince Knorr Chicken Stock Granules, Robertsons Steak & Chops Spice, diced onion, bread crumbs and egg. Divide into 4 portions and shape into burger patties.
    • Heat a pan with oil and fry the burger on both sides at a medium heat.
  2. To Make the Red Onion Marmalade:

    • In a pot, sauté the red onion. Then add the chopped chilli and Robertsons Veggie Seasoning.
    • Add the sugar, red wine and balsamic vinegar. Simmer, reduce and season.
    • Slice the 4 burger buns open and lightly toast.
  3. To Assemble the Burger:

    • Place the oak leaf salad leaves on the base of the burger with the ostrich burger patty.
    • Top the burger with the red onion marmalade and Hellmann’s Original Mayonnaise.
    • Garnish with the roughly chopped pistachio nuts.
