Sweet Potato Fries and Baby Corn:

  • Potatoes, sweetfries 188 g

Preparation

  1. Baby Chicken:

    • To make the stuffing roughly chop together black olives, cherry tomatoes, feta cheese, Robertsons Italian Herb, Robertsons Veggie Seasoning, egg and breadcrumbs.
    • Place on a sheet of cling film, tie both ends and remove any air. Should resemble a sausage shape. Steam for 10 minutes
    • Truss chicken
    • Mix together run ingredients.
    • Pour rub over chicken and massage into chicken. Cover and leave to marinate for 30 minutes
    • Roast at 160˚C for 45 minutes to an hour
  2. Sweet Potato Fries and Baby Corn:

    • Deep fry the sweet potato fries, and season with Robertsons Chip and Potato Seasoning.
    • Blanch the baby corn in boiling water with bicarb for 1 minute, and drain. Season with 5g of Robertsons Veggie Seasoning
    • Serve with rocket leaves and grilled lemon wedge
