  • Onions (finely sliced) 140.0 g
  • Sunflower oil 50.0 ml
  • Water 2.7 l
  • Tinned corn kernels (drained, water off) 410.0 g
  • Mealie meal 650.0 g

Wholesome and hearty sausage and butter bean casserole paired perfectly with sweet corn and caramelised onion pap for the perfect comfort meal.

Preparation

  1. Step 1

    Sausage and Butter Bean Casserole:
    1. Cook the sausages – grill or oven bake and set aside.
    2. In a large pot, fry the onions in the sunflower oil until soft. Add the peppers and cook.
    3. Add the Knorr Tomato Pronto, Fine Foods Fruit Chutney and Robertsons Savoury Rice.
    4. Add 500 ml of the water and the cooked sliced sausages to the pot and bring to the boil.
    5. Mix together remaining 500 ml of cold water and the Knorr Professional Brown Sauce Base and add to the pot.
    6. Simmer for 3 min on a low heat.
    7. Add in the butter beans and simmer for 5 min.
  2. Step 2

    Sweet Corn and Caramelised Onion Pap:
    1. In a pot, fry the onions in the sunflower oil until soft and caramelised.
    2. In the same pot, add the water and bring to the boil.
    3. Then add the tinned corn kernels and Knorr Aromat.
    4. Slowly stir in the mealie meal and allow to simmer for 10 – 15 min until cooked.
  3. Chefs Tip

    You may substitute the peppers with frozen mixed vegetables.
