Rigatoni pasta tossed in a smooth, spiced tomato sauce with garlic, onion, and a touch of peri-peri heat. Combined with prawns and mussels, and finished with parmesan and microgreens for a balanced, flavour-forward seafood dish.

Preparation

  1. Method

    1. Bring a large pot of water to a boil and season generously with salt. Cook pasta for 8-12 min.
    2. Meanwhile heat olive oil in a pan over medium heat. Sauté garlic and onion until golden and softened.
    3. Season with Robertsons Fish Spice and Robertsons Peri-Peri Spice. Add in the Knorr Professional Tomato Pronto.
    4. Mix the water with Knorr Professional Vegetable Stock Granules and add into the tomato mixture, allow to simmer for 10 min. 
    5. Season the seafood mix with Robertsons Fish Spice and add to the sauce allow to simmer for 5-10 min until the seafood is cooked.
  2. Garnishes

    1. Toss in the cooked pasta garnish with micro greens and serve immediately.
