1. Introduction

Chef Dietrich, Head Chef at Coobs, Johannesburg introduces Premiumization – the concept of taking something everyday and elevating it with a twist. Experiment with two dishes – Mash and bangers, and Buttermilk chicken and chips.

2. Buttermilk fried chicken – Ingredients

Familiarise yourself with the ingredients for the first dish – Buttermilk fried chicken topped with a honey glazed sauce and spice-mix sprinkled chips. 

3. Buttermilk fried chicken - Prep part 1

Begin by coating your chicken in egg wash, flour and breadcrumbs before learning a classic slaw recipe to accompany your dish.

4. Buttermilk fried chicken - Prep part 2

Deep-fry, drizzle and sprinkle your way through Part 2, taking the chips and chicken through the preparation process for crisp, seasoned results before plating.  

5. Bangers & Mash - Prep part 1

Learn the ingredients before grilling and seasoning your sausages. Learn the technique for a creamy, soft mash. 

6. Bangers & Mash - Prep part 2

Create a leek and reduced stock jus, before deep frying your onions for the final components before plating. Move onto combining your ingredients for a premium take on the otherwise ordinary classic.
