A rich, spiced tomato base simmered with green peppers, onions, and smoked paprika, topped with poached eggs and fresh coriander, served with warm flatbread. Shot on location at UFS Head Office, Durban, South Africa.

Preparation

  1. Method

    1. In a pot, heat oil and fry green peppers and onion until translucent.
    2. Add crushed garlic, red chillies and Robertsons Smoked Paprika and fry for 2 min.
    3. Add Knorr Professional Tomato Pronto and cook until tomatoes have disappeared. Some water can be added to help cook down faster (optional). 
    4. Season with Knorr Aromat Original and pinch of white sugar. 
    5. To serve, place the sauce base into a skillet, place poached eggs on top and garnish with coriander. Serve with flatbread. 
  2. Recipe Tip

    Poached eggs can be swapped out for fried eggs. Knorr Professional Mozambican Peri-Peri Marinade & Basting can be added for a spicier and more flavorful profile.
