Chocolate Mousse:

  • Milk (cold) 250.0 ml
  • Cream 250.0 ml
  • 50 ml Brandy (optional)

Raspberry Forest:

  • 250 g Raspberries (fresh / frozen)
  • Sugar 30.0 g
  • Cornstarch 5.0 g
  1. Chocolate Mousse:

    • Using an electric whisk attachment, mix together the CARTE D'OR Chocolate Mousse mix, milk and cream for 1 minute, scrape down the sides of the bowl, then mix on high speed for 4 to 5 minutes. Add the brandy and mix for 1 minute. Place in a piping bag and refrigerate for 1 hour.
  2. Raspberry Forest:

    • Mix together the cornstarch and the CARTE D'OR Strawberry Flavour Sauce and add together with the remaining ingredients to a saucepan. While stirring continuously, bring the mixture to the boil and allow to thicken for 2 minutes. Remove from the heat and set aside to cool.
  3. To Plate:

    • Pipe the chocolate mousse onto the plate, drizzle with the raspberry forest and garnish.
  4. Garnish:
