Lemon Syrup

  • Lemon juice 40.0 ml
  • Water 100.0 ml
  • Sugar 50.0 g

A bright, citrus-forward tiramisu made with Carte d’Or Tiramisu mix, fresh cream, lemon juice, and lemon zest for a refreshing lift. Layered with biscuits dipped in a homemade lemon syrup, it offers a zesty, modern twist on the traditional Italian favourite. Shot on location at UFS Head Office, Durban, South Africa.

Preparation

  1. Lemon Syrup

    1. Add Carte d’Or Tiramisu Mix, fresh cream and water to a mixer. Using a whisk attachment, whisk for 1 min on low, scrape down the bowl and whisk on medium speed for 3 min.
    2. Add lemon juice and lemon zest, gently fold till incorporated.Place in a pipping bag with a small round tip nozzle and set aside.
  2. Lemon Syrup

    1. In a pot, add all ingredients and bring to the boil. Drop temperature and allow to simmer for 5 min on medium heat – it should be slightly sticky. Remove and set aside to cool.
  3. Assemble

    1. Trim off the ends of each biscuit. Dip the biscuits into the cooled syrup and place onto the plate, pipe lemon tiramisu on top and garnish as desired.
