  • Red Morello cherries 800.0 g
  • Olive oil 80.0 ml
  • White or brown onions, finely sliced 500.0 g
  • Light brown sugar 50.0 g
  • Balsamic vinegar 45.0 ml
  • Fresh thyme, leaves taken off stem 2.5 ml
  • Clementines, finely chopped by hand 1.0 whole

Preparation

  1. Method

    1. Drain the cherries and keep aside. 
    2. Reduce the cherry juice until thick and syrupy and set aside. 
    3. Cook the onions in the olive oil until caramelised and sticky.   
    4. Add the sugar, balsamic vinegar and thyme, and cook until the sugar has melted and everything is sticky but not burnt. 
    5. Add the clementine, cherries, reduced cherry syrup and cook for 5 min. 
    6. Cool down.
