Method:

  • Sunflower oil 50 ml
  • 1 kg Beef (cubed)
  • Onion (finely diced) 85 g
  • Garlic (crushed) 12 g
  • Tomato paste 25 g
  • Water (boiling) 1.3 l
  • 285 g Carrots (quartered)
  • 285 g Potatoes (quartered)
  • 200 g Cowpeas (cooked)
  • Parsley (finely chopped) 4 g
  1. Method:

    • Heat oil in a large pot over medium heat and cook until meat is golden brown.
    • Add onions to the pot. Stir and cook for 2 – 3 min until softened, then add garlic and cook for 1 min.
    • Add Robertsons Paprika and stir well. Add tomato paste and cook for 1 min, followed by Knorr Tomato Pronto, Knorr Beef Stock Granules and boiling liquid. Bring to the boil and simmer for 1 hour. Add carrots and potatoes, then cover and cook for an additional 20 min. Add cowpeas and Knorr Brown Sauce Gravy Base, simmer for 10 min.
    • Stir in parsley and serve.
  2. Chef's Tip:

    Ensure that the cowpeas are fully cooked and soft.
