Tiramisu

Matcha Syrup

  • Boiling water 400.0 ml
  • Sugar 50.0 g
  • Milk 50.0 ml
  • Matcha powder 30.0 g

Matcha Latte Sauce

  • Cream 250.0 ml
  • Matcha powder, latte 50.0 g

To Assemble

  • Boudoir biscuits 8.0 pc

Garnish

  • Chocolate garnish 40.0 g
  • Edible flowers 8.0 pc

This dessert is filled with a light, whipped Carte D’or Tiramisu cream infused with matcha powder. It is finished with a dusting of matcha and garnished with a luxurious matcha latte sauce.

Preparation

  1. Tiramisu

    1. Add Carte D’or Tiramisu, cold milk, fresh cream and matcha powder to a mixer. Using a whisk attachment, whisk for 1 min on low, scrape down the bowl and whisk on medium speed for 3 min.
    2. Place matcha tiramisu in a pipping bag with a small round tip nozzle and set aside.
  2. Matcha Syrup

    1. Add all ingredients to a pot and bring to the boil, lower temperature and allow to simmer for 2 min. set aside to come to room temperature.  
  3. Matcha Latte Sauce

    1. In a pot heat cream, add matcha latte powder and whisk till fully combined and no residual powder remains. Set aside to cool.
  4. To Assemble

    1. On a plate, pipe few drops of matcha tiramisu so the biscuits can sit on top. Dip Boudoir biscuits into the cooled matcha syrup. Place one biscuit directly on the pipped matcha base. Pipe as desired directly onto the biscuit. Close with the second biscuit and pipe the same on top. 
  5. Garnish

    1. Garnish with chocolate work and edible flowers. Using a mini sieve dust matcha latte powder onto the tiramisu for a classic tiramisu look. Serve with matcha latte sauce on the side.
