Make lunchtime gourmet with this delicious blend of sweet peaches and savoury chicken, all wrapped up with a rich Coronation mayo and served with a crisp side salad for the perfect balance of flavours.

Preparation

  1. Preparation

    1. Remove the skin from the cooked chicken, shred the meat from the chicken carcasses and place in a bowl. 
    2. Peel and thinly slice the onions. Roughly chop the coriander. 
    3. Drain and chop the peaches. 
    4. Heat the oil in a frying pan and add the onions, fry until soft. 
    5. Add the Robertsons Rajah Medium Curry Powder and Robertsons Veggie Seasoning and cook for a further 2 min. 
    6. In a bowl, combine the chopped peaches, Fine Foods Fruit Chutney, Hellmann’s Fine Whip Salad Cream, coriander, cooked onion mix. 
    7. Add in the shredded chicken, mix and refrigerate.
  2. To assemble

    1. Divide the chicken filling into 8 portions. 
    2. Lightly warm the wrap, add a portion of chicken filling, some lettuce and wrap up.
  3. Chef's tip:

    This filling can be used for sandwiches, pita pockets, rolls and tramezzini’s.
