  • Chicken breast 1.0 kg
  • Orange marmalade 75.0 g
  • 1/2 Orange (peel on and chopped)
  • Garlic (finely chopped) 10.0 g
  • Ginger (fresh, crushed) 10.0 g
  • Red chilli (fresh, finely chopped) 5.0 g
  1. Preparation:

    • Pre-heat oven to 220 ˚C.
    • In a baking tray, mix all the ingredients together and cover with foil. Bake in an oven at 150 ˚C for 1,5 hours.
    • Remove from oven, allow to cool slightly and shred chicken breasts. Reduce cooking liquid by half and add to the chicken.
  2. To Assemble:

    • Top the pizza base with tomato base sauce, mozzarella and pulled chicken mix. Bake in hot oven for 10 minutes. Garnish with Brie and coriander pesto.
  3. Chef's Note:

    • You can never go wrong with chicken. Its so easy to dress up or down - as showcased in this showstopper! Brie (known as the Queen of Cheese) adds a element of class to this pizza.
