To Prep:

  • Pineapple 500.0 g
  • Onions, red 200.0 g
  • Rosa tomatoes 400.0 g
  • Cucumber 400.0 g
  • Red chilli 20.0 g
  • Coriander, fresh, chopped for garnish 20.0 g

To Cook:

  • Fresh lemon juice 50.0 ml
  • Sugar 20.0 g
  1. To Prep:

    10 minutes
    • Cube the pineapple.
    • Cut the red onions into half.
    • Cut the tomatoes in half.
    • Deseed the cucumber and cut into half moons.
    • Deseed and slice the red chillies.
    • Roughly chop the cucumber.
  2. To Cook:

    • Mix together all the ingredients. Allow to stand for 20 minutes before serving for the flavours to improve.
  3. To Serve:

    • Garnish with fresh coriander.
  4. Top Tip:

    • Serve alongside glazed gammon or roast chicken
