To Prep:

  • Pineapple 500.0 g
  • Red onion 200.0 g
  • Cherry tomatoes 400.0 g
  • Cucumber 400.0 g
  • Red chilli 20.0 g
  • Coriander (fresh)Garnish 20.0 g

Spicy, flavouful tropical salad with pineapple, red onion, cucumber, chilli and coriander.

Preparation

  1. To Prep:

    10 minutes
    • Cube 500g pineapple.
    • Cut 200g red onions into half.
    • Cut 400g cherry tomatoes in half.
    • Deseed 400g cucumber and cut into half-moons.
    • Deseed and slice 20g red chillies.
    • Roughly chop the cucumber.
  2. To Cook:

    • Mix together all the cut-up ingredients. Allow to stand for 20 minutes before serving for the flavours to improve.
  3. To Serve:

    • Garnish with fresh coriander.
  4. Top Tip:

    • Serve alongside glazed gammon or roast chicken
