Preparation

  1. Method:

    • Pre-heat oven to 140 °C, and trim all fat from the lamb.
    • Thoroughly mix remaining ingredients together and rub onto the meat. Marinate for 2-3 hours.
    • Place in roasting pan and roast for 1 hr.
    • Remove and let rest for 7-10 min before slicing.

    The rub can be used on any protein for grilling.
