  • Garlic (crushed) 50.0 g
  • Lamb leg roast (deboned) 2.5 kg
  • Coriander (ground) 15.0 ml
  • Black pepper (ground) 20.0 ml
  1. Method:

    • Pre-heat oven to 140 °C, and trim all fat from the lamb.
    • Thoroughly mix remaining ingredients together and rub onto the meat. Marinate for 2-3 hours.
    • Place in roasting pan and roast for 45 min.
    • Remove and allow to rest for 7-10 min before slicing.

    • The rub can be used on any protein for grilling.
