Made with Knorr Professional Brown Onion Soup, this classic French Onion Soup is a delicious veggie-based option. Mix it up with your choice of protein, or serve it with a side of cheesy toast for the perfect all-around hearty meal!

Preparation

  1. Method

    1. Heat butter and oil in a pot, sauté onions, garlic and bay leaf for 15-20 min until golden brown.
    2. Mix Knorr Professional Brown Onion Soup and water separately, and then add to the onion and garlic mixture.
    3. Bring to the boil and simmer for a few minutes. Then season with salt.
    4. Brush both sides of the French loaf slices lightly with olive oil and toast on both sides.
    5. Sprinkle with the grated gruyere and mozzarella cheese. Just before serving, return to the oven and bake until the cheese is bubbly and lightly browned.
    6. To serve, ladle soup into a bowl and transfer one cheesy toast onto the top of each bowl of soup.
  2. Chef Tip

    • Do not cook the onions too quickly over high heat, as you risk burning them which will add a scorched, bitter taste to your soup. To draw out the onion’s full flavour potential, resist the urge to speed up this step.
